    35 g
  • Butter
    15 g
  • Eggs
    1 Stk
  • Sugar
    15 g
  • Whipping cream
    30 ml
  • Vanilla extract
    ¼ tsp
  • Iodized salt
    1 pinch
  • Espresso
    ¼ tbsp
Method

Step by step

    Melt chocolate with butter over a water bath, cool slightly.

    Separate eggs.

    Beat egg yolks with half the sugar until fluffy.

    Add espresso (if used) and vanilla.

    Stir chocolate into egg yolk mixture.

    Whip cream stiff.

    Beat egg whites with salt and remaining sugar to firm peaks.

    Fold cream into chocolate mixture.

    Fold in egg whites in 2 steps, do not stir.

    Fill into glasses and chill at least 4 hours.
