Method

Step by step

    Soak beans overnight, drain.

    Heat olive oil in a large pot.

    Finely dice onion, carrot and celery, sauté in oil 5 minutes.

    Add pressed garlic.

    Add beans, potatoes and pureed tomatoes.

    Pour in broth, simmer 30 minutes.

    Add pasta and cook 8 minutes.

    Add spinach and let briefly wilt.

    Season with salt and pepper.

    Serve with parmesan, basil and olive oil.
