Method

Step by step

    Drain cherries, bring juice with starch and a little sugar to a boil.

    Fold in cherries, let cool.

    Roughly chop hazelnuts, caramelize with butter and sugar into brittle.

    Cool on parchment, roughly chop.

    Whip cream stiff, mix with mascarpone, powdered sugar and vanilla sugar.

    Roughly break ladyfingers.

    Layer in glasses: ladyfingers, cherries, cream, brittle.
