  • Garlic cloves

  • Ginger

  • Broth

  • Coconut milk

  • Olive oil

Method

Step by step

    Halve pumpkin, remove seeds.

    Cut pumpkin, carrots, potatoes and onions into rough pieces.

    Peel garlic and ginger.

  4. 4

    Place everything on a tray, combine with olive oil, salt, pepper, curry and paprika.

    Roast at 200°C for about 35 min.

    Place roasted vegetables in a pot, top up with broth and coconut milk.

    Puree until creamy.

    Adjust with salt, pepper and chili flakes, briefly heat.

    Serve sprinkled with toasted pumpkin seeds.
