Method

Step by step

    Season chicken breast with salt and pepper, fry in olive oil until golden on both sides and slice into strips.

    Blend anchovies, garlic, mustard, lemon juice, Worcestershire and egg yolk into a creamy mass.

    Slowly work in olive oil until dressing emulsifies.

    Adjust with salt and pepper.

    Wash, dry and tear lettuce into bite-sized pieces.

    Combine lettuce with dressing, plate.

    Distribute chicken, croutons and shaved Parmesan over the top.
