- Beef brisketOr: Beef roast½ kg
- BBQ sauce30 ml
- Paprika sweet½ tbsp
- Brown sugar½ tbsp
- Garlic powder¼ tbsp
- Onion powder¼ tbsp
- Pepper¼ tbsp
- Cayenne pepper¼ tsp
- MustardOr: Dijon mustard¼ tbsp
- Apple vinegar½ tbsp
- Worcestershire sauce¼ tbsp
Method
Step by step

Mix dry rub from paprika, brown sugar, garlic powder, onion powder, pepper, salt and cayenne.

Pat brisket dry, rub with mustard, then massage in rub generously.

Ideally rest in fridge overnight.

Preheat oven to 110°C.

Place brisket on a rack in a roaster and slow-cook 6–7 hours until core temp 93°C.

Mix apple vinegar and Worcestershire and spritz the meat every 90 minutes.

Wrap brisket in foil and rest 30 minutes.

Slice thinly across the grain.

Serve with warm BBQ sauce.
