Method

Step by step

    Finely chop onions and garlic, sweat in olive oil until translucent.

    Dice bell pepper and sauté along.

    Add tomatoes, season with cumin, paprika, salt and pepper.

    Simmer sauce for 10 min.

    Press wells into the sauce and crack eggs into them.

    Cook over medium heat until egg whites are set.

    Serve sprinkled with fresh parsley and bread.
