Step by step

Soak raisins in rum or warm water.

Separate eggs.

Whisk flour with milk, egg yolks, sugar, vanilla sugar and salt into smooth batter.

Beat egg whites stiff and gently fold into batter.

Heat butter in a large pan.

Pour in batter, sprinkle drained raisins on top.

Bake over medium heat 4 minutes until golden.

Flip (or quarter with spatula and flip piece by piece).

Bake second side another 3 minutes.

Tear into irregular pieces with two forks, briefly caramelize, dust with powdered sugar, serve with plum compote.
