Step by step

Wash eggs very thoroughly and use only fresh eggs.

Separate yolks from whites.

Slit vanilla bean lengthwise, scrape out seeds.

Cream egg yolks with powdered sugar and vanilla in a bowl.

Slowly stir in milk and cream.

Warm over a water bath at medium heat to max 70°C while stirring constantly.

Take off the heat and stir in rum.

Bottle into sterilized bottles, keeps about 2 weeks chilled.
